This is a very simple yet healthy salad that I make sometimes for friends coming over for dinner at my home.
Ingredients:
1 cup organic baby spinach
½ cup roasted pistachios (cut each piece into 2 parts)
½ cup dried cherries (cut into pieces)
Dressing:
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon orange juice, fresh squeezed
1 teaspoon Dijon mustard
In a large salad bowl, toss together spinach, pistachios and cherries. In a jar, combine olive oil, balsamic vinegar, orange juice and Dijon mustard, mix well with fork. Drizzle the dressing over the salad. Toss and serve.
